Recipes for preserving lobio for the winter from beans and vegetables

Many housewives are engaged in preserving vegetables for the winter. These are Korean-style salads, lecho, sauces, as well as a traditional Georgian dish called lobio. The main ingredient in this incredibly delicious salad is green beans.

Required Ingredients:

  • Black Eyed Peas;
  • 1 kg of bell pepper (it is better to take red varieties);
  • 3 large carrots;
  • 3 kg medium tomatoes (sour tomatoes can be used);
  • 100 ml of vegetable oil (you can also take olive oil);
  • 50 grams of table salt;
  • 355 grams of granulated sugar;
  • 65 ml of acetic acid.

Making red bean lobio:

Wash the beans thoroughly in cold water, then put them in a saucepan and boil them in salted water until cooked (they should be soft). Gently peel sweet peppers from the stalk, cut the core with seeds. Cut it into thin strips or small cubes.

Thoroughly peel and grate the carrots. Cut the tomatoes in half, soak in boiling water for 3 minutes, and then grind in a mixer.

Put all cooked vegetables in a large saucepan, add salt, sugar and oil to them. After that, put the bean lobio over medium heat for the winter. When the salad boils, it must be cooked for another half hour over low heat.

15 minutes until fully cooked, pour acetic acid into the salad. Sterilize the cans, put the salad in them and roll up. Cover the jars with a warm cloth and wait until they cool to room temperature. Move to a cold room.

Lobio classic recipe

The classic recipe for this salad includes red beans. Preparing blanks for the winter is quite simple. Many recipes include beans, but more often than not, they are not the main ingredient, unlike lobio. You can also put a lot of different greens in a Georgian snack. It can be mint, cilantro, hyssop, marjoram or oregano. This will only make the appetizer taste better.

Required Ingredients:

  • 2.5 kg of beans in pods;
  • 2 kg of tomatoes (preferably red or pink varieties);
  • 4 cloves of garlic;
  • 3 tbsp. l. salt;
  • 3.5 tbsp. l. granulated sugar;
  • 2 small onions;
  • Several sprigs of purple basil;
  • Black pepper (preferably ground);
  • Caraway;
  • Saffron;
  • Paprika.

How to cook lobio with vegetables:

The salad is preserved as follows: boil the beans until tender.Chop the onion and fry until golden brown. Put the tomatoes in a saucepan, cover with cold water and cook for 7 minutes. Then remove the skin from them and cut into large slices, put on the onion. Simmer for another 15 minutes.

Peel the garlic and crush with a knife. Put it in the tomatoes. Then add beans, sugar and salt there. Simmer for half an hour. At the end of cooking add finely chopped basil, pepper, paprika, saffron and cumin.

When the workpiece is ready, it can be laid out in jars and rolled up with a metal lid. Pickled vegetables are ideal as a side dish with meat.

How to cook lobio for the winter with broth

Lobio recipes come in different flavors, but if you add broth to it, the taste will be very unusual. Canning French beans in tomato for the winter with the addition of broth takes no more than one hour. How to prepare a recipe for preserving lobio for the winter?

Required Ingredients:

  • 3 kg of French beans;
  • 2 kg of ripe large tomatoes;
  • 250 butter (you can take lamb);
  • 3 large onions;
  • 2 tbsp. l. coarse salt;
  • A bunch of fresh dill;
  • A sprig of lemon balm;
  • Fresh cilantro;
  • Parsley;
  • 1 head of garlic;
  • 1 liter of broth;
  • Ground black pepper.

Method for preparing Georgian appetizer with tomatoes:

Peel the garlic and chop finely. Rinse beans under running water and boil, put in a large saucepan. Then add butter to it (you must first melt it), finely chopped onions, garlic and black pepper. Season with salt and herbs.

Cut the tomatoes into cubes. Put them in the beans, pour over the broth and simmer for half an hour. When the salad is ready, you can put it in jars. Wait until they cool down to room temperature. Then you can put them in the basement.

When preparing the snack, you can use any spices and herbs. Before use, Georgian salad can be heated and covered with eggs.

    I closed several cans according to this recipe for testing and regretted that it was not enough, it turned out just fine, so tasty for the winter. Not a single can exploded and the lid did not swell. The recipe is amazing, next time I'll close more.
