For the preparation of vegetable caviar, it is best to select fresh, young zucchini specimens, small in size. The peel should be free of any damage, stains or signs of decay. In young specimens, the seeds are immature, so there is no need to clean the inside.

All selected vegetables are thoroughly washed, then laid out on a towel until completely dry. Some housewives cut off the tips on both sides of the fruit.

Small glass jars are suitable for storing ready-made caviar. They must be carefully examined beforehand. There should be no chips or cracks on the surface. It is advisable to wash the selected cans with a soda or soap solution. Then sterilization is carried out.
