Despite the fact that this is a Hungarian folk dish, it has long been recognized as one of its own in many families. Every hostess has made this dish at least once. With the onset of autumn, an abundance of vegetables appears in markets and summer cottages, including sweet peppers, carrots, tomatoes and onions. They are the main ingredients of lecho.

How to properly prepare food and containers

For cooking, use only ripe, firm, fleshy vegetables. For a spectacular appearance, choose red, orange and yellow peppers. All components of the dish are washed, the stalk is cut off from the pepper and the seeds are scraped out.

Tomatoes are also stalked, and onions and carrots are peeled. Jars are well washed and sterilized using steam, roasting in an oven or microwave.

Classic lecho

Despite the fact that this is a national Hungarian dish, it was the classic Bulgarian lecho, also called "You will lick your fingers", that won the greatest love. Required ingredients to make it:

  • tomatoes - 4 kilograms;
  • bell pepper - 5 kilograms;
  • sugar - 250 milliliters;
  • salt - 2 tablespoons (with a slide);
  • vegetable oil - 250 milliliters;
  • table vinegar (9%) - 50 milliliters.

Peeled peppers are cut into 5-8 pieces, depending on their size. The stem of the washed tomatoes is cut off, scrolled in a meat grinder, and the juice is poured into a large saucepan. Then salt and sugar are poured there and put the saucepan, covering it with a lid, on low heat. After boiling, sunflower oil is added to the juice and Bulgarian pepper is put.

After the start of the boil, the lecho is stewed for half an hour over low heat, stirring constantly, and then removed from the stove and vinegar is added. Then evenly the filling and tomato sauce are poured into sterilized jars. It is important to cook the lecho for no more than 30-40 minutes so that it does not turn into a puree.

The delicious Hungarian lecho recipe is suitable both for rolling and for fresh consumption. It differs slightly from the Bulgarian version.

Composition:

  • sweet pepper - 3 kilograms;
  • tomatoes - 0.9 kilograms;
  • carrots - 3 pieces;
  • onions - 300 grams;
  • garlic - 1 large head;
  • smoked bacon (bacon) - 100 grams;
